Many quick bread loaves will have a crack down the top center. This is simply a characteristic of this type of bread and does not mean there is anything wrong with your bread.

To tell if loaves are done, they should have pulled slightly from the sides of the pans and be golden brown and springy to the touch. Cool quick breads on wire racks and allow plenty of space around loaves for air to circulate.

To give breakfast bread recipes even more flavor and texture, add a topping such as streusel, brown sugar, cinnamon sugar, graham cracker crumbs, cookie crumbs, crushed dry cereal, chopped nuts, coconut and even crisp crumbled bacon.
