Mini Chocolate Cheesecakes

An easy mini cheesecake recipe full of rich chocolate flavor, these mini cheesecakes will be a hit at any gathering.

Easy to make, these sweet treats are even more tempting when garnished with whipped cream and fresh strawberries.

Ingredients

  • 16 chocolate wafer cookies
  • 2 packages (8 ounces each) cream cheese, at room temperature
  • 1/2 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon vanilla extract
  • 2 eggs, at room temperature
  • Whipped cream for garnish, optional
  • Sliced strawberries for garnish, optional

Preparation

Preheat oven to 325 degrees F. Line 16 muffin cups with foil or paper baking cups. Place 1 wafer cookie, flat side down, in each cup.

In a large bowl, with mixer on medium speed, beat cream cheese until smooth. Gradually beat in sugar and cocoa until fluffy. Beat in vanilla. Beat in eggs, one at a time, until well blended. Divide batter evenly among cups (cups will be almost full).

Bake cheesecakes for 20 to 25 minutes or until centers are firm. Remove from oven and cool for 15 minutes. Refrigerate in muffin cups at least 1 hour. Cover and refrigerate at least 1 hour longer before serving. Garnish with whipped cream and strawberries before serving, if desired.
